Indian Cuisine

Indian cuisine is incredibly varied and enjoys the same diversity as the languages, religions and climates in India. Hospitality is a very important part of Indian culture and heritage so don’t be too surprised if you are overfed by someone in their house when you have only just met them.

The essence of good Indian cooking revolves around the appropriate use of aromatic Indian spices. The skill lies in the subtle blending of spices to enhance a particular dish rather than to overwhelm one’s tastebuds with too much of any one thing. These spices can also be used as appetisers and digestives.

The unforgettable aroma of India is not just the heavy scent of jasmine and roses on the warm air, but the fragrance of spices so important to Indian cooking - especially to preparing curry. The English word "curry" derives from "kari", meaning spice sauce, but unlike the west, curry does not come in a powdered form. The spices, like the basic ingredients, vary from region to region and many of these spices are also noted for their medicinal properties.
